  Valentine's Day or not, we here on FM Lifestyle are suckers for romance.

  We love romantic walks at sunset, we love little gifts for no reason, we love romantic dinners in beautiful restaurants, especially if they are well hidden spots that we discover by chance.

  So, valentine's Day or not, we found that taking a stroll along the alleys west of the Lama Temple, popping in and out of the beautiful little designer boutiques, having espresso on the porch in one of the little cafes and holding hands is a great way to spend a romantic day in Beijing.

  We felt it would be even better if we can finish the day with a romantic dinner, maybe a bottle of wine on a top floor terrace looking at the golden roofs of the Lama Temple gleaming in the sunset...

  无论是不是情人节,我们悦生活都喜欢浪漫的事物。尤其是那些隐藏在小巷深处、被我们偶然发现的地方,更能带给我们浪漫感。比如在雍和宫西边的胡同里牵着手散散步,逛逛街边的小店,再坐在路旁来一杯咖啡,这在我们看来就是非常浪漫的一天。如果能在晚上来一顿大餐、配上点红酒,同时看着雍和宫金色的屋顶在夕阳的照耀下金光闪闪,那就更好不过啦。

  

  Well we found all this and more in a jungle!

  Well, maybe not a jungle, but a mini tropical rain-forest at the east end of Wudaoying Hutong.

  So today we are taking you to Wan, a newly opened Vietnamese restaurant in a very special space.

  We meet Ivan, a Beijing boy who came back to the city after a long time away from home to bring his own style of southeast Asian dining to the capital.

  我们今天就将带大家前往位于五道营胡同东边的一个迷你“热带雨林”——菀。菀是一家新近开张的越南料理餐厅;来自北京的男孩儿Ivan是这里的老板,在今天的节目中我们就会和他聊聊“菀”的故事。

  

  Ivan was born in Beijing to a middle class family, no silver spoons or privilege.

  So when he went to study in Australia he knew that as soon as school starts he would have to get a part time job to support himself.

  Ivan started working in the kitchen of a local restaurant in Sidney.

  Despite the long hours and the back breaking work, he found it to be an educating experience.

  Ivan出生于北京的一个中产家庭,所以当他前往澳洲读书时,他不得不找一份兼职工作来补贴生活。于是,Ivan便开始在悉尼当地一家餐厅的厨房里打工;尽管工作非常辛苦,但他却从中学到了不少。

  

  Working in a restaurant kitchen allowed Ivan to see the lives of local working class people, immigrants and foreign students from other countries who did not get financial support from their parents while studying in University.

  The knowledge he gained working in the kitchen proved to be more useful than what he learned in school.

  在厨房工作的经历不但让Ivan了解了当地工薪阶层、移民以及留学生的生活状况,在这里他学到的知识也比在校园里学到的更加实用。

  

  Back then, Ivan did not think he will one day own a restaurant of his own.

  He worked hard and was slowly promoted from dishwasher to kitchen manager.

  Today, as a restaurant owner, that experience he gained working in the kitchen long ago, allows him to understand the needs and problems of his own kitchen staff, be close to them and work as a team.

  那时,Ivan还没有想着能拥有一家属于自己的餐厅。由于工作勤奋,他从洗碗工慢慢晋升到了厨房经理;在现在看来,这段工作经历让他能更好的理解自己的员工,与他们更为亲近;同时工作起来也更像一个团队。

  

  The first thing you will love about Wan, even before you try the food, is the location.

  The building is a traditional Beijing imperial official structure typical to the Lama Temple area.

  It has an internal yard though it is not a courtyard house.

  Ivan made sure to keep the original structure, colors and building materials.

  When he chose the location for his restaurant the most important statement was: "I'm coming home!"

  He wanted to find the Beijing of his childhood with its original sights and sounds.

  He fondly points at a flock of trained pigeons flying in formation over the temple rooftop and says: "that's what I was looking for."

  “菀”开在雍和宫一带其中一栋老式宫廷建筑中,Ivan完整的保留了这里的结构、颜色和建筑材料。在选址时,他希望能找到自己孩童时代北京的样子。“这就是我想要的。”他深情的指着在天上飞的一群信鸽说。

  

  But when it came to the food Ivan chose not to go for the local cuisine.

  Ivan puts a great emphasis on the way diners feel AFTER the meal.

  We've all been there, we had a wonderful meal but a couple of hours later we think: "oh, I shouldn't have had that".

  Heavy food will make you feel uncomfortable or simply put you to sleep.

  Wanting to focus on light healthy hearty food, Ivan decided to put the internationally popular Vietnamese Pho at the center of his menu.

  在菜式的选择上,Ivan最终选择了相对健康、清淡的越南料理。许多不易消化的食物虽然吃起来美味,但事后感受往往会很糟糕;Ivan因此决定把国际流行的越南河粉作为菜单的重点。

  

  A great bowl of Pho is one of the greatest pleasures of south-east Asian dining.

  A great bowl of Pho starts with a great pot of broth.

  Preparing the Pho broth is a long and elaborated process that takes years of learning and practice.

  There are strict rules to follow and a right order for adding the ingredients.

  汤是河粉中非常重要的元素。汤料的准备过程严格而又复杂,食材的添加有着明确的顺序;这些都需要经年累月的学习与实践。

  

  

  In order to learn the secrets of a perfect Pho broth Ivan traveled to Vietnam several times.

  But not only to Vietnam.

  In the past decade Pho has become one of the most popular dishes around the world and in order to understand how this simple local food found its way into the hearts of people in five continents Ivan traveled to many cities to learn how Pho has adapted to local pallets.

  为了学到制作上好汤料的秘密,Ivan曾多次前往越南。在过去的十年里,河粉从一种普通的越南当地食物迅速成为世界上最火的饮食之一;Ivan为了一探其中究竟、了解河粉在不同地区有了哪些调整,更是动身前往了许多国家。

  

  

  Other than absolutely fabulous Pho and classic Vietnamese dishes, you can find other south-east Asian favorites on the Wan menu.

  Some of the popular Thai cold dishes and BBQ meats, some Malaysian style noodles, a great selection of south-east Asian desserts, (absolutely my favorite part of the menu), and as of recently, also some delicious and unique Laksa.

  除了米粉等经典越南料理外,这里还提供许多其他东南亚料理,比如泰式冷盘、马来西亚面条、各式各样的东南亚甜点(菜单中我最喜欢的部分)以及马来西亚辣味米粉汤等。

  

  

  Every new edition to the menu is a result of Ivan's long research trips where he travels across the region in search of great recipes.

  (Sometimes he needs to pay A LOT of money to get them).

  每一次新菜单的推出都是Ivan长途跋涉、学习的成果;有时他需要花费一大笔金钱才能得到想要的菜谱。

  

  One example of Ivan's in-depth research expeditions was his recent hunt for the perfect Hainan Chicken Rice, an all time favorite across Asia.

  He wanted to understand what makes a perfect Hainan Chicken Rice perfect and why is the best one NOT in Hainan.

  When introducing his version of the dish in Wan, he followed his main guideline of a great after-meal feeling.

  比如“海南鸡米饭”就是他最新的研究成果。这道菜已经在亚洲出名许久,Ivan不光希望了解到做好“海南鸡米饭”的奥秘,更希望知道为何最好的海南鸡米饭反而不在海南!当介绍到“菀”版本的海南鸡米饭时,他同样从“餐后体验”开始。

  The entire inner courtyard is covered by a glass roof, greenhouse style, and the tables are surrounded by dozens of tropical plants and trees.

  There are even sprinklers that spray forest mist into the air every few minutes and the smell of fresh leaf and tree-bark is everywhere.

  还记得我们开头提的“迷你热带雨林”吗?实际上“菀”的整个室内庭院都被草皮覆盖,桌子周围也装饰有许多热带植物、树木;这里甚至还有森林喷雾装置,让整个室内充盈着树木、叶子的清香。

  On my first visit to Wan I thought it was just cute interior decoration, but on my second visit, on a heavy polluted day I realized it was a clever design of natural air purification and detox environment.

  我第一次去菀时觉得这些只是可爱的装饰;但我第二次去时,那天正好是个雾霾天;我才意识到这些自然空气净化设计是多么的精妙。

  

  

  Ivan is quite the perfectionist and despite great reviews so far he is still not completely happy with Wan today, he wants it to be better.

  When I ask him about future plans he is strict and cautious: "first do what I do better, then see what's next".

  Ivan还是个完美主义者,尽管菀已经收到了无数好评,但他对菀还不是完全满意,他还想做到更好。当我问他关于未来的计划时,他严谨的回答:“我先把我正在做的事情做好,再去考虑未来吧。”
